I like to make “brinner” (breakfast for dinner) every week or so because I just love breakfast food so much! Thankfully my toddler agrees with me (little Miss can PACK away the pancakes) and I can generally get my husband on board too (the secret is bacon).

You guys, I could eat these pancakes for daaays. They are fluffy. They are light. The flavor combo with the vanilla is spot-on.

They are truly delicious! I made thisrecipe my own by modifying it from this one by my personal hero, The Pioneer Woman.

The only sweetener in them is from the Greek yogurt, unless you want to add some of your favorite sweetener to the pancake batter.

I find that especially if I use vanilla Greek yogurt I don’t need the extra sweetness to the pancake batter. But you do you, friend.

You can, of course, add your sweetener on top, (aka pour on maple syrup) and a handful or two of fresh blueberries and a dollop of whipped cream if you’re feeling fancy.

How are these pancakes healthy?

In addition to being low in refined sugar, I love that each of these pancakes is packed with protein too! Thanks to the Greek yogurt each pancake boasts almost 6 grams of protein-the same amount as in one egg!

I also modified them to use white whole wheat flour, which is a pantry essential that conveys the lightness of white flour with the whole grain benefits of wheat flour.

You can also use half white flour and half whole wheat flour if you don’t have white whole wheat four. Or all whole wheat or all white. Once again, you can’t really go wrong. (Except that all whole wheat flour will probably not be as fluffy as the other options.)

What toppings go well with these Greek Yogurt Pancakes?

I’m so happy you asked! I love pancakes topped with melted peanut butter, blueberries and a drizzle of REAL maple syrup. Do NOT bring that fake stuff up in here!

I also sometimes top my pancakes with a dollop of Greek yogurt or a scoop of applesauce. A few almonds or walnuts sprinkled on top is a tasty way to get in some added healthy fat too.

How long will these pancakes last in the refrigerator?

These pancakes should last a week when stored in an airtight container. Reheat in the microwave for 20-30 seconds per pancakes

These healthy pancakes tasted great reheated the next day! Sometimes pancakes are “off” when reheated, but these were completely wonderful meaning I can make a big batch and have a quick and nutritious breakfast ready for me and my little girl each weekday morning. *love*

Can I freeze these Greek yogurt pancakes?

Yes! You can freeze them.

Make sure they are completely cooled off to room temperature. Then wrap a serving size (1-3 pancakes) in plastic wrap. Wrap again. Place in airtight container or wrap in aluminum foil, then place in freezer.

Should be good frozen for up to three months.

Fluffy Greek Yogurt Pancakes

These Fluffy Greek Yogurt Pancakes are light and delicious, plus packed with protein! The recipe is easy and fast, so perfect for a busy morning breakfast!

Ingredients

  • 2 eggs
  • 1 cups plain or vanilla Greek yogurt
  • 1/2 cup milk (I used almond)
  • 1 teaspoon vanilla extract
  • 1 cup white whole wheat flour (or 1/2 cup whole wheat flour and 1/2 cup white flour)
  • 1 TBSP sugar or sweetener of choice (optional)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • olive oil cooking spray
  • Toppings: blueberries, maple syrup, Greek yogurt, orange zest, nuts whipped cream

Instructions

  1. Whisk eggs, Greek yogurt, vanilla, and milk together until well combined and fluffy. Add flour, baking powder, salt and sugar, if desired, and whisk again until a smooth batter forms.
  2. Drop by 1/3 cup onto heated griddle coated with butter. Cook until small bubbles form and pop on top of pancake. Flip and continue cooking on the other side until golden brown.
  3. Serve warm with blueberries, maple syrup and nut topping.
